Why convert
7Z — the 7-Zip archive: packs tighter than ZIP and opens in 7-Zip, WinRAR and The Unarchiver. TAR.GZ is the usual archive on Linux and servers: any system unpacks it with no extra software.
What changes in the file
The files inside do not change by a single byte: the archive is unpacked and packed again, keeping folders and file names. A password, the archive comment and symbolic links are not carried over.
Which settings to pick
"Compression": "Normal" suits almost everything; "Smaller file" trims a few more percent but takes longer; "Faster" is for content that is already compressed (photos, video) and will not shrink anyway.
