Why convert
iPhone voice memos and iTunes music are M4A, which some car stereos, older Androids and editing tools don't understand; everything understands MP3.
What changes in the file
The sound is re-encoded from AAC to MP3. Keep the MP3 bitrate at least as high as the original: 128 for voice memos, 256 for music.
Which settings to pick
Voice memos are mono anyway, so pick mono under More settings: half the size with no audible loss.
